Flavor is more than taste

Basic tastes such as sweet, sour, bitter, salty, and umami are only part of flavor. Aroma reaches the nose directly and as retronasal aroma while beer is in the mouth, which is why pinching the nose makes beer seem muted.

Mouthfeel and context

Carbonation, body, alcohol warmth, astringency, and serving temperature change how intense a beer seems. Servers should describe the total perception rather than reducing flavor to one ingredient.

Flavor evaluation combines orthonasal aroma, retronasal aroma, basic tastes, mouthfeel, carbonation, temperature, and trigeminal sensations such as heat or astringency. A strong note names the sensation first, then links it to possible sources only after the observation is clear.

The applied workflow is observe, describe, compare, infer, and decide. Compare the beer to style expectations, freshness expectations, and service conditions. If a character can have more than one source, state the evidence: for example, buttery aroma plus slick mouthfeel suggests diacetyl, while stale paper and muted hops point more toward oxidation.

A strong note about perception evidence separates observation from inference: first name the aroma, taste, mouthfeel, intensity, and persistence; then compare the finding with style expectation and service condition. If a beer shows citrus hop aroma, firm bitterness, and a clean finish, that points differently than citrus plus stale paper and muted aroma. The professional conclusion should say whether the character is expected, borderline, or a likely fault, and what evidence supports that call.
